E. coli bacteria are a universal indicator of food quality. The presence of E. coli is an indicator of fecal contamination of food or water. May enter and multiply in foods due to improper transport, storage, preparation or serving. An increase in the number of these microorganisms can cause serious poisoning. Symptoms of E. coli food poisoning: abdominal pain, nausea, vomiting, diarrhea, possibly with blood. Body temperature usually rises slightly or remains normal.

Staphylococcus is a bacterium that is very widespread in the environment. They can be found in the air, water, earth and on the surfaces of various objects. A staphylococcal infection that has been ingested can multiply very quickly and release a dangerous toxin in an environment with a high sugar and moisture content. When infected, a disease-causing dose of toxin accumulates in products in 6-10 hours. The toxin accumulated in the product enters the intestines, is quickly absorbed and causes acute food poisoning. A person suddenly has severe repeated vomiting and pain in the epigastric region. Sometimes gastric lavage is required.
